Chicken Breasts With Pecan Sausage Stuffing - cooking recipe

1/3 lb. ground pork sausage
1/3 c. butter
1/3 c. finely chopped celery
1/3 c. finely chopped green pepper
1 small onion, finely chopped
1/2 c. chopped pecans, divided
1/8 tsp. salt plus 1/4 tsp. pepper
3 c. dry bread cubes (1/4 inch pieces)
1 large egg, lightly beaten
1 1/2 Tbsp. milk
4 skinned and boned whole chicken breasts
1 1/2 Tbsp. butter or margarine
3 Tbsp. fine, dry bread crumbs
chopped fresh parsley (garnish)
Preparation

Brown sausage in a Dutch oven, stirring until it crumbles; remove sausage from pan, and set aside; discard drippings.
