Beef Kabobs Over Lemon Rice - cooking recipe

Ingredients
    6 oz. boneless beef sirloin steak, cut into 1-inch cubes
    1 small zucchini, sliced
    1 small yellow squash, diced
    1 small red bell pepper, cut into squares
    1 small onion, cut into chunks
    1/4 c. low-calorie Italian dressing
    1 c. hot cooked rice
    2 tsp. fresh lemon juice
    1 Tbsp. snipped fresh parsley
    1/4 tsp. seasoned salt
Preparation
    Combine beef and vegetables in large plastic food bag with zippered closing.
    Add dressing and marinate 4 to 6 hours in refrigerator.
    Remove beef and vegetables from marinade.
    Heat reserved marinade to a boil.
    Alternately thread beef and vegetables onto 4 skewers.
    Grill or broil kabobs, turning and basting with marinade 5 to 7 minutes or to desired doneness.
