Spanish Rice - cooking recipe

Ingredients
    1 can low sodium chicken broth
    1 small can of tomato sauce (1/2 c.)
    1-1/2 c. long grain rice
    1/4 c. diced onion
    1-1/2 c. cold water
    1 tsp. salt
    1 Tbsp. Smart Balance butter
    Fresh or canned corn (optional)
Preparation
    Melt butter in pan over medium high heat. Once melted, add onion. Saute onions 1-2 minutes and add rice. Cook rice 5 minutes, stirring 2 or 3 times. Add broth, water and tomato sauce. Bring to a boil. Cover and simmer until all liquid is completely absorbed and rice is dry. Mix in corn, if desired. Serve with green chili and pinto beans.
