Wild Rice Salad - cooking recipe

Ingredients
    1 (6 oz.) pkg. long grain and wild rice mix
    1 (11 oz.) can white corn, drained
    1/4 c. chopped fresh parsley
    3 green onions, chopped
    1/4 c. lemon juice
    2 cloves garlic, minced
    1 Tbsp. olive oil
    1/2 tsp. dried dill weed
    1/4 tsp. dry mustard
    3 Tbsp. dry roasted sunflower kernels
    leaf lettuce
Preparation
    Prepare rice according to package directions omitting fat. Combine rice, corn and next 2 ingredients in a large bowl; set aside.
    Combine lemon juice and next 4 ingredients.
    Pour over rice mixture, tossing gently.
    Cover and refrigerate 8 hours.
    Before serving, sprinkle with sunflower kernels.
    Serve on lettuce leaves. Makes 14 servings.
