Cajun Stuffed Tomatoes - cooking recipe

Ingredients
    4 large (about 2 lb.) tomatoes
    1 lb. andouille or sweet sausage (casing removed), coarsely chopped
    1/2 c. chopped green peppers
    1/2 c. chopped celery
    2 tsp. minced garlic
    2 tsp. thyme leaves, crushed
    2 eggs, slightly beaten
Preparation
    Use tomatoes held at room temperature until fully ripe. Preheat oven to 350\u00b0.
