Three-Pepper Baked Chicken - cooking recipe

Ingredients
    6 boneless, skinless chicken breast halves
    salt
    3/4 c. each: red, green and yellow bell peppers, cut into short, thin strips
    3/4 c. slivered red onion
    1 Tbsp. vegetable oil
    1 c. picante sauce
    1 tsp. chili powder or ground cumin
    1 c. (4 oz.) shredded Cheddar or Monterey Jack cheese
    chopped cilantro (optional)
Preparation
    Place chicken in a single layer in lightly greased 13 x 9-inch baking dish; sprinkle with salt.
    In 10-inch skillet, cook and stir bell peppers and onion in oil until tender.
    Stir in picante sauce and chili powder.
    Spoon mixture evenly over chicken; cover dish tightly with foil.
    Bake at 350\u00b0 for 30 minutes.
    Remove foil; sprinkle chicken with cheese.
    Bake, uncovered, just until cheese is melted.
    Sprinkle with cilantro, if desired.
    Serve with additional picante sauce.
    Makes 6 servings.
