Potato Candy - cooking recipe

Ingredients
    1 Small or 1\\2 large Potato
    2 Boxes Confectioner's Sugar
    1 Med jar Peanut Butter
Preparation
    Boil potato, cool and mash. Place in large mixing bowl.
    Add sugar a litte at a time, mixing with electric mixer.
    Keep adding sugar until it can be rolled into a ball like dough.
    Sprinkle more sugar on table top. Cut dough in half. Roll out with rolling pin (flat like a pizza).
    Keep sugar on rolling pin, to prevent sticking. Spread peanut butter all around dough. Then roll up dough from one end to the other, until rolled into a large tube. Use knife and cut into small slices. Place slices on waxed paper, sprinkle with sugar. Place in refrigerator, until peanut butter hardens.
