Fried Eggplant Or Squash - cooking recipe

Ingredients
    size eggplant or squash desired, sliced 1/4-inch thick
    salt
    flour
    oil or shortening
    Parmesan cheese
Preparation
    Put sliced eggplant on wax paper and sprinkle each slice lightly with salt.
    Let stand for at least an hour.
    This will take the water out.
    Use paper towel to get water off wax paper. Coat each slice with flour.
    Fry in oil or shortening until browned.
    Sprinkle each slice while hot with cheese.
    Serve while still warm.
