Jambalaya - cooking recipe
Ingredients

1 lb. smoked sausage
1 c. chopped celery
1 medium chopped onion
1 chopped bell pepper
1 Tbsp. shortening
1 c. raw rice
1 lb. crawfish tails
12 green onions with tops, chopped
2 c. water
1 tsp. Worcestershire
1/2 tsp. Tabasco
3 cloves minced garlic
salt and pepper to taste
Preparation

Brown sausage in heavy pot then remove to drain on paper towel.
Saute onion, celery, pepper and garlic until tender. Remove from pot.
Add shortening and when it gets hot, add rice and brown lightly.
Add crawfish and cook 3 minutes.
Add sausage, vegetables and remaining ingredients.
Cover and simmer 20 minutes.
