Feta Salad Dressing - cooking recipe

Ingredients
    1 roasted red bell pepper
    1 clove garlic
    1 small shallot
    1 Tbsp. fresh parsley, minced
    1/4 c. crumbled Feta cheese
    1/4 c. balsamic vinegar
    1/4 c. unsweetened pineapple juice
    1 tsp. salt
    1/4 tsp. pepper
    1/4 c. olive oil
Preparation
    To roast bell pepper, char over open flame until all sides are blackened, about 2 to 3 minutes.
    Place in a bowl, cover and let steam until cooled.
    Peel, cut off top and discard seeds.
    Chop to measure 1 tablespoon and reserve the remaining bell pepper for some other use.
