Flounder With Lemon Cream - cooking recipe

Ingredients
    2 Tbsp. butter
    1/4 c. lemon juice
    1 Tbsp. lemon zest
    1 tsp. tarragon
    1/2 tsp. salt
    1/2 tsp. pepper
    4 small fillets
    1 tsp. Dijon mustard
    1/2 tsp. dry mustard
    1/2 c. heavy cream
Preparation
    Preheat broiler.
    Line broiler pan with foil.
    Melt butter on stovetop.
    In a small bowl, combine melted butter, 2 tablespoons lemon juice, 1 teaspoon lemon zest, 1/2 teaspoon tarragon, salt and pepper.
    Place fish on prepared pan.
    Brush lemon-butter mixture on fish.
    Broil fish 4 inches from heat about 7 minutes until fish is cooked.
    In mixer bowl, combine remaining 2 tablespoons lemon juice, 2 teaspoons lemon zest, 1/2 teaspoon tarragon, Dijon mustard and dry mustard.
    Beat cream into mixture in a thin stream. Continue beating until cream forms soft peaks.
    Serve fish topped with a dollop of the lemon cream.
