Stuffed Eggplant - cooking recipe

Ingredients
    1 eggplant, cooked and mashed
    1/4 c. onion, chopped
    1/4 c. green pepper, chopped
    1/4 c. celery, chopped
    1 clove garlic, chopped
    1 tsp. sage
    1 egg
    6 slices stale bread, soaked in milk
    1/4 to 1/2 lb. bacon, fried crisp and crumbled
    Italian cheese
Preparation
    Cut up and fry bacon strips; saute all vegetables.
    Fry bread until dried out.
    Mix bacon, eggplant and sauteed vegetables. Mix with egg and cheese.
    Bake at 300\u00b0 until brown.
