Sweet Potato Cake - cooking recipe

Ingredients
    1 1/2 c. cooking oil
    2 c. sugar
    4 eggs, separated
    4 Tbsp. hot water
    2 1/2 c. sifted flour (self-rising)
    1/4 tsp. salt
    3 tsp. baking powder
    1 tsp. ground nutmeg
    1 1/2 c. grated raw sweet potatoes
    1 c. chopped pecans
    1 tsp. vanilla flavor
Preparation
    Combine cooking oil and sugar and beat until smooth.
    Add egg yolks and beat well.
    Add hot water, then dry ingredients which have been sifted together.
    Beat egg whites until stiff and fold into mixture.
    Bake in 3 greased (8-inch) layer cake pans at 350\u00b0 for 25 to 30 minutes.
    Cool and frost with icing.
