Chicken Roux - cooking recipe
Ingredients

1 whole chicken, cut up
1/2 bell pepper
1 whole onion
2 large stalks celery
salt and pepper to taste
Preparation

Boil chicken until done with chopped celery and bell pepper. Salt and pepper to taste.
Make roux of oil and flour.
Make roux real brown (almost burned).
Add onion, sliced.
Add to chicken. Cook until done.
Serve over rice.
