Beef Stroganoff - cooking recipe

Ingredients
    2 lb. sirloin steak or venison
    3 Tbsp. sweet butter
    2 onions, sliced thin
    1 lb. mushrooms, sliced
    1 Tbsp. flour
    1/2 tsp. white pepper
    1/2 tsp. paprika
    dash of cayenne
    1 c. sour cream
    cooked noodles, tossed with poppy seed and butter
    chopped chives or dill
Preparation
    Slice beef into narrow strips.
    Melt butter in skillet and add meat and onions.
    Cook and stir until meat browns.
    Lower heat; add mushrooms and more butter, if needed.
    Cook 10 minutes.
    Remove mixture from skillet and set aside.
    To skillet juices add remaining butter, flour and seasonings.
    Add sour cream, slowly blending until smooth.
    Add meat mixture and heat through (add water if needed).
    Serve with noodles.
    Top with chives.
    Serves 6.
