Cabbage Soup - cooking recipe

Ingredients
    1 medium head green cabbage, shredded
    2 slices uncooked turkey bacon, diced
    2/3 c. chopped onions
    2 Tbsp. olive oil
    2 qt. chicken broth
    2 medium tomatoes, peeled and sliced
    black pepper to taste
    2 large white potatoes, peeled and cubed
    1/2 tsp. dried thyme
    2 cloves garlic, finely chopped
Preparation
    Rinse the cabbage in cold water.
    In a large stockpot, saute the bacon, onions and garlic in the oil for 5 to 7 minutes or until the onion is soft.
    Add the chicken broth and tomatoes. When the broth begins to boil, add the cabbage and pepper.
    Cook, covered, over high heat for about 5 minutes.
    Lower to a medium boil for 15 to 20 minutes, stirring often.
    Add the potatoes and thyme and continue cooking at medium boil for 30 to 35 minutes or until the vegetables are tender.
    Add more water if necessary. Makes 8 to 10 servings.
