Squash Casserole - cooking recipe

Ingredients
    1 or 2 kinds squash (I use zucchini and yellow squash)
    margarine
    green pepper
    onion
    tomatoes (fresh, skinned or canned)
    rice
    salt and pepper to taste
Preparation
    Melt 1 stick of margarine in casserole dish or pan.
    Add squash, cut in chunks, diced pepper and onion.
    (May use 1 or 2 peppers and 1 large onion.)
    Add tomatoes and 1/2 to 1 cup rice, according to size of casserole.
    Remember, rice swells and absorbs the liquid.
    Add salt and pepper to taste.
    I have given out this recipe many times.
    It is well liked.
