Orange Loaf Cake - cooking recipe

Ingredients
    2 c. cake flour, sifted
    1 3/4 tsp. baking powder
    1/2 tsp. salt (optional)
    1 1/4 c. sugar
    1/2 c. shortening
    1/2 c. orange juice
    1/2 c. grated orange rind
    2 large eggs
Preparation
    Preheat oven to 350\u00b0.
    Measure first 4 items together.
    Add orange juice.
    Add softened shortening and beat for 2 full minutes (by clock).
    Add unbeaten eggs.
    Continue to beat for 2 more minutes.
    Scrape bowl sides and bottom frequently.
    Pour into greased loaf pan.
    Bake at 350\u00b0 for 60 to 65 minutes.
