Golden Potato Bake - cooking recipe
Ingredients

5 lb. potatoes
2/3 c. melted oleo
4 eggs, beaten
1/4 c. minced parsley
1 c. shredded Cheddar cheese
1/2 c. shredded Cheddar cheese
1 1/2 c. chopped onion
1 (13 oz.) can evaporated milk
2 1/2 tsp. salt
1/4 tsp. pepper
Preparation

Peel potatoes; put in cold water.
Saute onion in butter until tender.
Add evaporated milk.
Bring to boil.
Remove from heat. Combine eggs in large bowl.
Beat until frothy.
Shred potatoes on medium shredder.
Place immediately in egg mix; turn to coat well.
Add parsley, 1 cup cheese and milk mixture.
Mix well. Turn into well-greased 9 x 13-inch baking dish.
Bake at 350\u00b0 for 1 hour.
Add 1/2 cup cheese; continue to bake 30 minutes.
