Potato Soup - cooking recipe

Ingredients
    1 c. water
    2 to 3 medium potatoes, diced
    1/2 c. chopped carrots
    1/2 c. chopped onion
    1/3 c. chopped celery
    4 Tbsp. margarine
    1/4 c. flour
    2 c. chicken stock
    1 1/2 c. skim milk
    2 c. cheese (low-fat)
    1/2 tsp. baking soda
    parsley
    salt and pepper
    paprika
Preparation
    Place water and vegetables in pot and cook until tender.
    Pour off water and save.
    Saute 2 tablespoons onion and parsley in margarine.
    Add flour and cook 1 minute.
    Add stock and skim milk and cook until thick.
    Add cheese and baking soda.
    Mix well and add vegetables and water they were cooked in.
    Serve hot with crackers.
