Strawberry Preserves - cooking recipe

Ingredients
    1 qt. strawberries
    3 c. sugar, divided
Preparation
    Wash, cap and slice strawberries.
    Add 1 1/2 cups of sugar to the berries and boil 5 minutes.
    Add remaining sugar and boil 10 to 15 minutes longer (a watery fruit must cook longer).
    Turn mixture into an earthenware jar and let stand 24 hours; stir occasionally.
    Seal cold in sterilized jars.
    The small quantity of fruit and the short cooking period are the secret of the preserves.
    You may do as many quarts as the jar will hold, but cook only 1 quart at a time.
    Berries may be frozen, unsweetened, in quart bags and used as needed to make preserves.
