Perch Italian Style - cooking recipe

Ingredients
    1 lb. fresh or frozen perch
    2 Tbsp. minced parsley
    1 garlic clove, minced
    3 Tbsp. olive oil
    1 c. hot water
    1 tsp. salt
    1/8 tsp. pepper
    pinch of oregano
Preparation
    Wipe
    fillets
    with paper towel.
    Cut fish into serving pieces.
    Cook
    parsley
    and
    garlic
    in hot oil in skillet for 3 minutes.
    Add
    hot water and bring to a boil.
    Add fish and seasoning.\tCover and bring again to boil and cook for 5 to 10 minutes or until fish flakes easily.
    Serve with liquid.
    Very good over rice.
