Mark'S Coconut Battered Chicken - cooking recipe

Ingredients
    6 to 8 boneless/skinless chicken breasts
    8 oz. (1 c.) eggs
    18 oz. (2 1/2 c.) milk
    1 lb. flour
    1/4 oz. salt
    1 c. sugar
    2 c. shredded coconut
Preparation
    Break and whip eggs.
    Add milk and continue whipping.
    Add flour and salt; whip until a smooth batter is formed.
    Add coconut and sugar.
    Mix in well.
    Let batter set for at least 1 hour before using.
    (Keep cool.)
    Pound out chicken with meat mallet so it is uniform in thickness.
    Dip chicken into batter and fry in oil at 350\u00b0.
    Brown one side, then turn and brown other side.
