Lean Scalloped Potatoes(Microwave) - cooking recipe
Ingredients

1 1/2 lb. potatoes, pared and sliced thin (4 to 5 potatoes)
3/4 c. shredded low-fat Swiss cheese
1/2 c. plain low-fat yogurt
1/2 c. skim milk
1/2 c. chopped green onion
2 Tbsp. chopped parsley
1/2 tsp. salt
pepper to taste
Preparation

Combine cheese, yogurt, milk, green onions and parsley.
Mix well.
Arrange half of potatoes in 2-quart microwave-safe dish. Spread half of cheese mixture over potatoes.
Repeat with remaining potatoes and cheese mixture.
Cover and microwave at High for 15 to 20 minutes or until potatoes are tender.
Stir once after 8 minutes.
