Potato Donuts - cooking recipe

Ingredients
    3 eggs
    3 Tbsp. shortening
    4 tsp. baking soda
    1 tsp. salt
    3/4 c. sugar
    2 3/4 c. flour
    1 tsp. salt
    1 c. instant mashed potatoes
Preparation
    In a large bowl, beat eggs, sugar and shortening. Combine dry ingredients. Gradually add to egg mixture alternately with mashed potatoes.
    Dough should be smooth.
    Chill at least 2 hours. Divide dough in half.
    Roll out to 1/2-inch thickness. Cut with doughnut cutter.
    Heat oil to 375\u00b0 in deep fat fryer. Drop in doughnuts. Turn as they float to top and fry to a golden brown. May roll in sugar and cinnamon or powdered sugar.
