Orange-Ginger Marinated Swordfish Steaks - cooking recipe

Ingredients
    5 (8 oz.) swordfish steaks (about 1 inch thick)
    3/4 c. tomato-based barbecue sauce
    1/2 c. white wine
    1 Tbsp. grated orange rind
    1/2 c. orange juice
    1/8 c. soy sauce
    1 Tbsp. finely chopped fresh ginger root
    2 cloves garlic, minced
    parsley sprigs and orange slices for garnish
Preparation
    Arrange fish in a large shallow dish.
    Combine barbecue sauce and next 6 ingredients; pour over fish.
    Cover and refrigerate 2 to 24 hours, turning occasionally.
    Remove fish from marinade, discarding marinade.
    Place fish in grill baskets that have been coated with cooking spray.
    Cook, covered with grill
    lid, over medium coals (300\u00b0 to 350\u00b0), 7 to 10 minutes on each side. Garnish, if desired, and serve immediately.
