Porketa - cooking recipe
Ingredients

1 (4 lb.) pork shoulder
1/2 c. fresh parsley, snipped
2 tsp. minced garlic
2 tsp. dried dill weed
1 tsp. fennel seed, crushed
1 tsp. dried rosemary
1/4 tsp. salt
1/4 tsp. pepper
3/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. dried dill weed
Preparation

Debone meat and remove outside fat.
Fill with a mixture of the next 7 ingredients.
Roll roast jelly-roll fashion and tie with a string.
Rub outside of roast with mixture of last three ingredients.
Roast in a 350\u00b0 oven for 35 to 45 minutes per pound or to an internal temperature of 170\u00b0.
Allow roast to stand for 15 minutes for easier carving.
Slice and serve on hard rolls.
