Mincemeat - cooking recipe

Ingredients
    7 lb. beef
    1/2 bushel apples
    2 cans cherries (not pie filling or candied)
    2 lb. raisins
    2 lb. currants
    2 qt. apple cider, boiled
    2 c. cider vinegar
    2 lb. brown sugar
    2 lb. white sugar
    4 Tbsp. cinnamon
    3 Tbsp. allspice
    stock from meat
    1 c. suet or 1 lb. margarine
Preparation
    Boil and grind the beef.
    Peel, core and grind apples. Combine all ingredients; mix well.
    Bring to a boil; simmer for 1 hour.
    Ladle into hot, clean jars.
    Seal.
    Process 1/2 hour in boiling water bath.
    Let stand 6 to 8 weeks before using.
