Low-Fat Muffins - cooking recipe
Ingredients

1 egg, beaten
3/4 c. milk (skim)
1/2 c. applesauce
2 c. flour
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 c. blueberries (if frozen, thaw and drain; optional)
Preparation

Heat oven to 400\u00b0.
Grease muffin cups with cooking spray. Combine milk and applesauce with beaten eggs.
Stir in remaining ingredients until flour is moistened (batter will be lumpy).
Fill muffin cups 3/4 full.
Bake until golden brown, about 20 minutes. Remove from pan immediately.
Makes about 1 dozen.
