Orange Pralines - cooking recipe

Ingredients
    2 c. sugar
    3/4 c. half and half cream
    1/4 tsp. salt
    2 1/2 Tbsp. light corn syrup
    juice and grated rind of 1 orange
    4 Tbsp. butter
    1 tsp. vanilla
    few drops orange food coloring (optional)
    2 c. chopped pecans
Preparation
    Place sugar, cream, salt and corn syrup in a saucepan and stir constantly until mixture boils.
    Add orange juice slowly and continue cooking until mixture reaches soft ball stage (240\u00b0 on candy thermometer.)
    Add orange rind and cook until it reaches 240\u00b0 again.
    Add butter, vanilla and food coloring.
    Cool.
    Beat until mixture holds its shape.
    Add pecans.
    Drop on wax paper. Store in tin or plastic containers.
    Makes about 1 1/4 pounds of candy.
