Judy'S Delicious Spinach - cooking recipe

Ingredients
    3 (10 oz.) pkg. frozen chopped spinach
    4 Tbsp. butter or margarine
    3 Tbsp. flour
    1 c. milk
    1 tsp. fancy mustard
    1/4 to 1/2 c. grated white cheese (Muenster, Havarti, Cheddar, Brick or Swiss)
    1/4 to 1/2 c. Parmesan cheese
Preparation
    Cook spinach in small amount of boiling salted water; drain thoroughly.
    Preheat oven to 350\u00b0.
    Melt butter in medium, flameproof baking dish.
    Turn off heat and stir in flour into butter until it forms a roux.
    Turn heat onto low flame; add milk gradually, stirring continually until sauce thickens.
    Add more milk if necessary.
    Add mustard, grated white cheese and Parmesan slowly, stirring continually until smooth.
    Add spinach; mix thoroughly.
    Sprinkle
    top with more Parmesan cheese.
    Bake uncovered for 20 minutes.
