Vegetarian Spinach Pasta - cooking recipe
Ingredients

1 (16 oz.) box De Cecco gourmet pasta (wide ruffle rectangular)
1 (16 oz.) carton ricotta cheese
1 (16 oz.) pkg. sliced mozzarella cheese
1 (26 oz.) jar tomato-basil Classico sauce
2 cans spinach or equivalent amount fresh spinach*
juice from 1 lemon
1 Tbsp. butter
1 tsp. garlic, minced
1 tsp. salt
1 tsp. pepper
1 Tbsp. olive oil
Parmesan cheese
Preparation

Bring 6 quarts of water to a boil with one tablespoon each of salt and olive oil.
Add pasta and gently stir.
Cook for approximately 10 minutes (do not overcook).
Drain a portion of the water.
Add 1 cup cool water to the pasta.
