Potato Soup - cooking recipe

Ingredients
    1/4 c. margarine
    1 large onion, chopped
    2 celery stalks with leaves, chopped fine
    1/4 c. flour
    3 c. water
    2 c. cubed potatoes
    2 tsp. salt (optional)
    1/2 c. milk or cream
Preparation
    Melt margarine in large saucepan.
    Add onion and celery. Cover and cook over medium-low heat until tender (15 minutes). Stir occasionally.
    Blend in flour.
    Add water, potatoes and salt; stirring constantly (increase heat).
    Bring to a boil, turn down and simmer 30 minutes or until potatoes are done.
    Stir occasionally.
    Add milk, heat but do not boil (will curd).
