Ingredients

1 scant c. white sugar
1/2 stick butter
1/4 tsp. salt
1 1/2 c. hot water
2 Tbsp. flour
1/4 c. milk
1 egg yolk, beaten
Preparation

Put the scant cup of white sugar, the butter and the salt into a heavy saucepan or iron skillet and brown (scorch) lightly, until sugar, etc. is melted.
Then pour in the hot water over the sugar mixture.
Let boil for a short time until all is well dissolved. Next, take the flour and mix in with the milk and the beaten egg yolk.
Pour this slowly (so will not curdle) into the sugar-syrup mixture.
Cook over low heat until pudding is thick and pour into an 8-inch baked pie shell.
Cover with meringue made from one's favorite recipe.
