Cheesy Potatoes - cooking recipe

Ingredients
    5 medium potatoes
    1/4 c. vegetable oil
    1/4 c. Parmesan cheese
    salt and pepper
    onion powder (optional)
    garlic powder (optional)
    Mozzarella cheese, grated
Preparation
    Wash and cube potatoes (do not peel) in 2-quart microwavable bowl.
    Add vegetable oil, salt, pepper to taste, onion and garlic powder as desired.
    Sprinkle Parmesan cheese over potatoes.
    Cover and microwave 15 minutes.
    Top with grated Mozzarella and microwave 5 to 10 minutes until cheese is melted.
