Lentil And Brown Rice Soup - cooking recipe
Ingredients

8 c. chicken broth
1 1/2 c. lentils
1 c. brown rice
2 lb. can tomatoes, drained, chopped, reserving juice
3 carrots, chopped
1 onion, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. dried thyme
1 bay leaf
2 Tbsp. cider vinegar or to taste
salt and pepper
Preparation

In large kettle, combine the broth, lentils, rice, tomatoes, reserved juice, carrots, onion, celery, garlic, basil, oregano, thyme and bay leaf; bring to boil and simmer the mixture, covered, stirring occasionally for 45 to 50 minutes or until rice and lentils are tender.
Discard bay leaf and season with vinegar, salt and pepper to taste.
Good with cut up smoked sausage added last 10 minutes.
Makes about 1 pound.
Serves 6 to 8.
