Chicken Rotel - cooking recipe
Ingredients

3 c. chicken, deboned
10 oz. pasta of your choice (shells)
2 lb. Velveeta (use 1 lb. and add as necessary)
1 c. Ro-Tel tomatoes
2 c. mixed vegetables
milk
Preparation

Cook chicken.
(I season with Cajun seasoning and garlic flakes.)
Cut cheese into squares and place in microwavable bowl. Add Ro-Tel.
You may need to add a little milk to make it smooth as it melts.
Microwave 2 to 3 minutes and stir.
Microwave 2 to 3 more minutes.
Cook pasta.
Drain chicken, pasta and vegetables. Mix all ingredients together in large bowl.
Season as you desire. Pour into casserole dish and top with cheese.
Bake in microwave until hot and bubbly.
