Guacamole - cooking recipe

Ingredients
    1 Tbsp. minced onion
    1/8 tsp. minced garlic
    1/2 tsp. lemon juice
    1/4 tsp. salt
    fresh ground pepper
    1 medium size ripe avocado
    1 small ripe tomato
    boiling water
    1/2 tsp. seeded and minced chili pepper or salsa to taste
Preparation
    Peel avocado and mash with fork in a mixing bowl.
    Blend in garlic.
    Stir in lemon juice, salt and pepper.
    Blend in onion. Using slotted spoon, blanch tomato in boiling water; remove and peel off skin.
    Finely chop tomato and add to avocado mixture. Add chili pepper; blend thoroughly.
    Cover with plastic wrap; refrigerate until ready to use.
    Makes about 3/4 cup.
