Reduced Fat Carrot Cake - cooking recipe
Ingredients

3 c. flour
1 1/2 c. sugar
1 c. coconut (optional)
2 1/2 tsp. baking soda
2 1/2 tsp. cinnamon
1 tsp. salt
2 c. shredded carrots
1 c. applesauce
2 tsp. vanilla
1 tsp. lemon extract
11 oz. crushed pineapple
egg substitute to equal 3 eggs
1/2 c. chopped nuts
Preparation

Blend all ingredients, then beat 2 minutes at high speed. Pour into a Pam-sprayed 13 x 9-inch pan.
Bake at 350\u00b0 for about 55 minutes, until toothpick inserted comes out clean.
Cool and frost with Fat-Free Cream Cheese Frosting.
