Couscous With Raisins And Red Peppers - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/3 c. chopped onions
    1/2 c. sweet red peppers, cut in cubes
    1 1/4 c. boiling water
    1/3 c. raisins
    1/8 tsp. ground cinnamon
    1/4 tsp. ground cumin
    1/2 tsp. grated orange rind
    salt and fresh ground pepper
    1 c. quick couscous
    1 Tbsp. butter
Preparation
    In a saucepan with tight fitting lid, heat olive oil.
    Add onions and red peppers.
    Stir until wilted, not brown.
    Add water, raisins and spices.
    Remove from heat and add couscous.
    Stir well.
    Cover and let stand 5 minutes.
    Uncover.
    Add butter and fluff.
