Spinach Souffle Salad - cooking recipe
Ingredients

6 oz. lemon gelatin
1 1/2 c. boiling water
3 Tbsp. vinegar
3/4 c. mayonnaise
1/4 tsp. salt
dash of pepper
2 c. ice water
1 (10 oz.) pkg. chopped frozen spinach, thawed and drained
3/4 c. chopped celery
2 Tbsp. minced onion
1 c. cottage cheese, drained
Preparation

Add gelatin to boiling water and stir until dissolved.
Add vinegar, mayonnaise, salt and pepper and mix well.
Add ice cold water and stir well.
Refrigerate until it begins to thicken.
Add spinach, celery, onion and cheese.
Blend well, turn into 9-inch square pan and stir again.
Refrigerate until firm.
Serves 9.
