Ingredients

4 Tbsp. margarine
1 onion, coarsely chopped
1 large green pepper, seeded and cut in 1 inch squares
1/2 lb. fresh mushrooms, sliced
1 small eggplant, pared and cut into 1 inch cubes
4 tomatoes, chopped
1 tsp. salt
1/8 tsp. pepper
1 c. herb seasoned stuffing mix
2 c. shredded cheese, divided
Preparation

In large skillet, heat margarine.
Saute onion and pepper for three minutes.
Add eggplant and mushrooms.
Saute 3 minutes.
Add tomatoes and seasonings.
Cook 1 minute.
Spread stuffing mix over bottom of casserole.
Layer half the vegetable mix, one cup cheese and the remaining half of the vegetable mix.
Cook 30 minutes at 350\u00b0.
Sprinkle with remaining cheese and bake 10 minutes longer.
