Algerian Sweet Meat - cooking recipe

Ingredients
    2 to 3 lb. lamb ribs or very lean pork backbone*
    1 c. dried apricots, soaked in warm water
    1 c. dried prunes, soaked in warm water
    2 c. (yes, 2 c.) granulated white sugar (do not use brown)
    2 tsp. orange flower water (found in gourmet section of some grocery stores)
    1 stick cinnamon
    1 tsp. nutmeg
    1 c. canned peaches
    1 c. canned pears
Preparation
    *Order ahead from butcher if you use lamb.
