Black-Eyed Pea Salad(Yields 6 Servings) - cooking recipe

Ingredients
    1 c. black-eyed peas (uncooked)
    4 c. water
    1 Tbsp. olive oil
    1 tsp. minced garlic
    2 Tbsp. apple cider vinegar
    1 Tbsp. Dijon mustard
    1/2 c. sliced scallions
    1 Tbsp. lemon juice
    1/4 tsp. salt
    dash of black pepper
    2 Tbsp. water
Preparation
    Place black-eyed peas and water in a 2-quart saucepan.
    Bring to a boil; reduce heat and simmer until tender, about 30 minutes. Drain and rinse under cold running water.
    Place in a large bowl.
