Very Cheesy Casserole - cooking recipe

Ingredients
    2 c. cooked soybeans
    2 c. cooked brown rice
    4 lightly beaten eggs
    2 c. (1 lb.) Ricotta or cottage cheese
    1 c. grated Mozzarella cheese
    1/2 lb. chopped mushrooms
    1 c. chopped onion
    2 to 3 cloves garlic, crushed
    1 tsp. each: basil, thyme and marjoram
    2 Tbsp. soy sauce
    salt and pepper to taste
    4 Tbsp. butter
    1/2 c. Parmesan cheese
    1/2 c. fine bread crumbs
    2 medium tomatoes, thinly sliced
Preparation
    Saute onion, garlic, mushrooms and herbs in butter, until onion is soft.
    Combine all but last 3 ingredients.
    Spread mixture in large, buttered oblong pan.
    Top with sliced tomatoes. Combine Parmesan cheese and bread crumbs.
    Bake in a 350\u00b0 oven for 40 minutes.
