Vegetable Rice - cooking recipe

Ingredients
    1/4 c. chopped onion
    3 Tbsp. butter
    1 1/2 c. sliced mushrooms
    2 c. chopped broccoli
    1 c. chopped tomato
    2 c. water
    2 chicken bouillon cubes
    1 c. uncooked rice
    1/2 Tbsp. salt
    1/2 tsp. oregano
    1/4 c. Parmesan cheese
Preparation
    Saute onion in butter in skillet until golden brown.
    Add mushrooms, broccoli and tomato.
    Cook for 4 minutes, stirring frequently.
    Add water and bouillon cubes.
    Bring to a boil.
    Stir in rice, salt and oregano.
    Cook, covered, over low heat for 20 minutes or until water is absorbed.
    Mix in cheese.
    Serve hot or cold.
