Spicy Vegetables And Sausage - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    2 medium onions, sliced and separated into rings
    3 green peppers, cut into strips
    2 garlic cloves, crushed
    1 (28 oz.) can whole tomatoes, drained and chopped, or 3 large fresh tomatoes, peeled and cubed
    3 medium zucchini, thinly sliced
    1 medium eggplant, peeled and diced
    2 Tbsp. chopped fresh parsley
    1 tsp. salt
    1/4 tsp. pepper
    1 (6 oz.) can tomato paste
    1/2 c. dry white wine
    1/2 tsp. sugar
    1/2 tsp. dried basil leaves
    1/4 tsp. dried marjoram leaves
    1/4 tsp. seasoned pepper
    1 lb. Polish sausage, cut into 1 inch slices
Preparation
    Heat oil to 375\u00b0 in an electric skillet.
    Add onions, green peppers, garlic, tomatoes, zucchini, eggplant, parsley, salt and pepper; saute for 10 minutes.
    Stir in tomato paste, wine, sugar, basil, marjoram and seasoned pepper.
    Add sausage; cover and cook until sausage is hot and vegetables are crisp-tender (about 5 minutes).
    Makes 8 servings.
