Italian Sauce - cooking recipe

Ingredients
    1/2 onion, chopped
    1 garlic clove
    1 carrot, grated (small)
    2 Tbsp. green pepper, chopped
    1 Tbsp. chives
    1 bay leaf
    1 tsp. oregano
    1/2 tsp. thyme
    1/4 tsp. basil
    2 Tbsp. parsley (fresh), chopped
    2 c. tomatoes (fresh or canned)
    1 (6 oz.) can tomato paste
    1 tsp. salt
    1/4 tsp. brown sugar
    1/8 tsp. pepper
Preparation
    Saute the onion and garlic in oil until soft.
    Discard the garlic.
    Add to this the carrot, green pepper, bay leaf, oregano, thyme, basil, chives and parsley.
    Mix well.
    Add fresh tomatoes and tomato paste to this mixture as well as the remaining ingredients and mix well.
    Simmer until thickened; remove bay leaf.
    Better if made one day ahead.
    Great canned!
    Great on pizza or any Italian type dish.
    Makes 2 cups.
