Spicy Pumpkin Pie - cooking recipe

Ingredients
    1 envelope unflavored gelatin
    3/4 c. Egg Beaters or 3 eggs
    4 tsp. liquid sweetener
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1 baked pie shell
    1 1/4 c. canned pumpkin
    1/2 c. condensed skim milk
    1/2 tsp. salt
    1/4 c. nonfat dry milk
Preparation
    Combine pumpkin, eggs, milk, sweetener, cinnamon, salt and nutmeg in saucepan.
    Mix well.
    Cook over medium heat, stirring constantly, until mixture comes to a boil.
    Remove from heat. Stir in gelatin softened in 1/4 cup cold water.
    Let cool.
    Chill until partially set and pour in pie shell.
    Serve with whipped topping, if desired.
    (One vegetable, 1/2 milk and 1/2 fat for diabetics.)
