Ingredients
-
1/2 c. Carolina rice
1 c. water
1 qt. milk
6 to 7 Tbsp. sugar (to taste)
1 Tbsp. vanilla
1 tsp. flour
1/4 c. water
2 eggs
cinnamon
Preparation
-
Boil rice and water slowly until rice absorbs all the water. Add cold milk to rice and simmer.
Add sugar and vanilla (or lemon peel).
Dilute flour in 1/4 cup of water and add to milk mixture, stirring to make sure it doesn't stick.
After it comes to a boil, remove from burner.
Beat eggs and then add to milk mixture (as we do when we make soup).
Mixture should be thick. If not, simmer a little bit more.
Be careful not to curdle eggs.
